Grilled Chicken with a Raspberry Vinaigrette Glaze, Over a Bed of Greens

Who says you can’t have fancy food at home?? I love being able to elevate simple everyday ingredients and turn them into something you wouldn’t expect.

This 5 ingredient recipe, is sure to be a great starter for any meal you plan to serve, this coming season. It’s packed with scrumptious flavor, while not being too heavy.

So here’s what you’ll need.

 

  • Raspberry Vinaigrette Glaze

(the vinegar I used was mentioned in my previous post click here)

  • Sauteed Red Onion

  • Asparagus, cut into small rounds

  • Arugula

(the exact set of prep bowls are linked here)

  • Grilled Chicken

Directions:

  1. Once all ingredients are prepped. Start layering the ingredients.
  2. Lay down your arugula on your serving platter/plate/bowl.
  3. Sprinkle asparagus rounds.
  4. Drizzle with Raspberry Vinaigrette Glaze.
  5. Place grilled chicken down and top with sauteed onions.
  6. Serve and Enjoy!

Chocolate Chip Pancakes

Now, who doesn’t like a plate stacked high of pancakes?

Let me paint a picture for you.

You wake up Saturday morning. While the family is still asleep, you make your way to the kitchen and get yourself a fresh cup of coffee with all the fixings (or none at all, your preference of course because  after all, this is your morning you’re visualizing).

Once you’ve let the caffeine settle in, you start to get your pots and pans out so you can start making a lovely breakfast for you and your family.

But then, you stop dead in your tracks.

“What to make!?”

Well, that’s where this recipe comes in!

This is a recipe that’s sure to please your family and it goes perfectly with any breakfast sides that you typically have (ex: hash browns, eggs, bacon, sausage, toast, or quiche)

And for any of you who don’t like chocolate chips in your pancakes you can always leave that ingredient out (or do half the batter with, and half without).

I think you’ll like this recipe because all you have is your Wet Ingredients and your Dry Ingredients. Once you have your ingredients separated into those categories and mixed them, all you need to do is sift the dry into the wet stirring every so often and then you’ve got yourself set up to make DELICIOUS pancakes.

So here’s what you’ll need:

 

Wet Ingredients:

  • 3 eggs
  • 1 cup of milk
  • 1/2 cup Melted butter (1 stick)
  • 1 tbsp Vanilla Extract

 

 

Dry Ingredients:

  • 2 cups flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 2 tsp sugar
  • 1/4 cup semi sweet chocolate chips (not pictured)

 

Mix ingredients together and sift the dry ingredients into the wet ingredients.

Directions:

  1. In a big bowl whisk eggs until thick.
  2. Add in milk, melted butter, and vanilla into eggs.
  3. In a different bowl, mix together flour, salt, baking powder and sugar.
  4. Sift dry ingredients into big bowl of wet ingredient mixture.
  5. Add in chocolate chips.
  6. Once all your ingredients are mixed, scoop about 1/2 cup of batter and pour into a pan over medium heat.
  7. Flip the pancake with a spatula (you’ll know when it’s ready to flip when the edges start to pull up from the pan and you can see tiny bubbles along the edges).
  8. Cook the other side of pancake about 4-5 more minutes, place on plate and cover to keep warm. Then Repeat steps 6-8 until all the batter is gone and you’ve got a tall stack of pancakes on your plate.
  9. Serve up, cover in yummy syrup and enjoy!
